Aruban Vegetables

This isn't really "Aruban" so much as it's a recipe I had for the first time in Aruba.

  1. Cook the onion on medium low in about 1 tbsp vegetable oil until translucent and remove from pan, set aside (you can caramelize the onions if you feel motivated). You can salt the onion while it's cooking to speed up the process but do not salt the zucchini and squash at all.

  2. If you used salt for the onions, wipe the pan.

  3. Add more oil, increase the heat to medium or medium high.

  4. Fry the zucchini and yellow squash until soft. Do not stir very much. Make sure you blacken the zucchini as much as possible without severely burning it.

  5. Add the onions back in and cook until browned

  6. Add the garlic and let cook for about a minute

  7. Season with smoked paprika, black pepper, and salt

  8. Top with fresh lemon juice for brightness

Notes

Do not salt the zucchini and squash while they're cooking or you'll get a sticky mess.
