Blackberry Cobbler

(Made with frozen berries, works just as well with frozen peaches)

  1. Preheat the oven to 375 degrees.

  2. Grease a 9x9 square baking pan or use the bread and potato pot (see note)

  3. In a large bowl, gently stir the frozen blackberries together with 2 tablespoons sugar, lemon juice, and vanilla extract

  4. Spread into the bottom of the prepared baking dish

  5. Combine flour, remaining 1 cup sugar, and egg together in a bowl until mixture resembles a coarse meal

  6. Sprinkle mixture evenly over the blackberries

  7. Drizzle melted butter evenly on top

  8. Bake in the preheated oven until lightly browned and bubbly, 35 to 40 minutes *see note

  9. Remove from the oven and let cool for 10 minutes

  10. Serve warm topped with whipped cream

Notes

I do this in the Emile Henry bread and potato pot which drastically increases the cook time but makes a better cobbler. It's about an hour and a half total bake time but check it at an hour and increase the time by 10mins until the top is evening golden brown.

I changed the recipe slightly to use whipped cream (see recipe) rather than Cool Whip just because I don't really keep cool whip on hand. Doesn't matter much. You can use spray can whipped cream, vanilla ice cream, homemade whipped cream, or just eat it plain.
