Can be vegan, vegetarian, or not

Ingredients
Instructions
Drain and rinse all canned beans
Add to a large pot
Add both cans of tomatoes and Rotel (if using)
Sauté the meat, if using and add to the pot
Sauté the onion first until translucent
If using celery add it at the same time as the onion
Add red bell pepper and sauté until soft
Add jalapeño and garlic, continue cooking for 30 seconds to 1 minute
Add to the pot and add all spices, stirring as you add them
Bring to a light boil and reduce heat
Simmer for as long as your guests' patience will last
Serve with cornbread or saltine crackers
Notes
Bean ratios are flexible. Can be all black beans or all kidney beans To use dried beans, cook them first For a creamier sauce, add more pinto beans Top with cheddar and sour cream or skip for vegan variations To serve in a bread bowl, make the hamburger or hotdog buns recipe except instead of shaping into 8 buns, shape into four larger boules
