Crinkle Cut French Fries
This recipe is all about technique

Ingredients
Instructions
Peel potatoes and place in a bowl of cold water when they're done
Take one potato and slice off the flattest edge to make it flat enough to sit on the cutting board
Using the crinkle cutter, slice the potato into approximately 1/2" slices, longways. Make the slices as even as you can.
Take one slice, lay it flat and cut into strips of approximately the same 1/2" width
Return the fries to the bowl of cold water
Repeat until all potatoes have been sliced this way
Drain into a colander, shaking to get rid of the excess water and then gently dry with a paper towel to soak up any excess water
Return to the empty bowl and toss with vegetable oil, make sure they are evenly coated
Air fry on the french fry setting, reducing the time slightly since that setting is for frozen french fries
Toss frequently to make sure they're cooking evenly
Remove from the air fryer and place into a bowl lined with parchment paper (you can use the same bowl)
Season with Emeril's Essence or Bojangles Seasoning or Lowry's Seasoning Salt
Notes
For cheese fries, shred cheese on top and bake in the bowl (if it's metal) in the oven for a few minutes until the cheese is melted
For chili cheese fries, do the same thing but when the fries come out of the oven, top with reheated chili
