  1. Place the eggs in a medium sized bowl, chop them in half to make them less slidey, and then smash them with a fork. It helps to do them one at a time.

  2. Add mayonnaise 1tbsp at a time until soft but not runny. It may not take the whole 1/4 cup...

  3. Add pickle relish, salt, and pepper, stir to combine.

  4. Thinly spread mayonnaise on both slices of bread.

  5. Serve as egg salad sandwiches with only lettuce (or really however you want)

Notes

Mom never put tomato on the egg salad sandwiches, I don't know why. If you do put tomato on it, salt and pepper the tomato.

For deviled egg salad, top with a dash of paprika or smoked paprika
