This is not exactly a smash burger but it's also not exactly not a smash burger...

Ingredients

Instructions

  1. Use fresh ground beef or thoroughly defrosted frozen ground beef

  2. Mince onions as finely as you can get them

  3. Smash garlic with the side of your knife and mince finely

  4. Add beef to a medium or large bowl

  5. Add Worcestershire sauce and fancy mustard (if using)

  6. Add spices

  7. Fold in ingredients to help with distribution

  8. Mix with your hands by squeezing

  9. Mix thoroughly until the beef is a little warm from your hands and quite squishy and all ingredients are evenly mixed

  10. Weigh the beef, divide into 3 or 4 patties depending on the size of your buns

  11. If you don't have a scale, you can eyeball it. Doesn't really matter

  12. On a cutting board smash out a patty into a wide thin round (it will thicken as it cooks)

  13. Poke a hole with your finger in the middle, about 1/2" round

  14. Fry in a cast iron pan to desired doneness

  15. Drain the juices into a small bowl as you go

  16. Scrape the bottom of the pan with a wooden spatula to remove the crust that builds up (important*)

Notes

It takes a little practice to get the patty the same size as the bun If you forgot the Worcestershire sauce like I always do, you can add it over the patties before they go into the pan About 1/2tsp or so of mustard, just a squirt or a dollop depending on how fancy the mustard is... *The reason you should scrape the pan is because as the crust builds up the meat stops making direct contact with the pan

Serve on KAF Hamburger or Hotdog buns or with gravy
