Mom's Mac & Cheese

Boil the elbow noodles in salted water for about 1-2mins less than the package directions. Drain, rinse with cold water.
Grease a 9x9 square pan and put the noodles into it.
Melt 2tbsp butter on low to medium heat. Add 2tbsp flour and sautée until golden. The flour will smell toasted. Turn the heat to low. Slowly add milk stirring constantly. to make a roux. Tbh I don’t know how much milk because I always eyeball it but it will be about three cups. The more milk you add the creamier the mac and cheese will be. Melt the cheese one small handful at a time in the sauce.
Add about 1c shredded or cubed cheese to the noodles and mix with the noodles. Pour in the sauce and stir until evenly mixed. Top with cheddar, breadcrumbs, and parmesan cheese (and more black pepper to taste).
Bake at 375° for about 45mins or until the top is browned and golden.
