Pan-Fried Meatballs

Ingredients

  • or to make it fancy, use 1/2lb ground beef and 1/2lb ground pork
  • also works with italian sausage but it's harder to mix

Instructions

  1. Very similar to the hamburger recipe, just omitting the Worcestershire sauce and mustard and perhaps going a little heavier on the basil.

  2. Combine all ingredients and mix with your hands until slightly squishy

  3. Shape into golf ball sized meatballs (or smaller but not really larger)

  4. Pan fry in cast iron on all sides

  5. Drain the juices into a small bowl as you go

  6. Scrape the bottom of the pan with a wooden spatula to remove the crust that builds up

  7. Add to pomodoro sauce or make them smaller and add them to eggplant lasagna

Notes

You can actually skip pretty much everything except the basil and salt

You're really going to want the cast iron for this but if you don't have one, you can use a non-stick frying pan
