Potato Soup
Adapted from Mom's recipe

Ingredients
Instructions
Peel and dice the potatoes, putting into a bowl of cold water as they're done to prevent browning
Either sauté the onions separately (my preference) or add to the water with the potatoes
Parboil the potatoes in salted water for about 6-8mins, until the potatoes give when pressed with a spoon (same as the potato salad)
Drain the water but do not rinse the potatoes
Cover with milk, 6-8c depending on the size of the pot and how many potatoes you used
Add the sausage (can be browned but is not necessary)
Heat on low until just warm but not boiling
Add a pat of butter and melt to give a sheen across the top of the soup
Serve topped with green onions
Notes
Sauté the onions separately for richer flavor Brown the sausage for the same reason Swap sausage for a bacon topping (not added to the soup) and top with cheddar to create a loaded baked potato soup
